Purple Swag

Ingredients

  • 2 oz Boardroom American Dry Gin 
  • .75 Pea Flower Syrup
  • .75 oz Lime Juice
  • Egg White

Syrup

Combine equal parts sugar and water into a pot and bring to a boil. Add desired quantity of Pea Flower to the syrup while hot, let cool and strain. Store in an airtight container.

Method

Combine all ingredients in a shaker tin and dry shake to emulsify the egg white. Add ice and shake to desired dilution. Double strain into a cocktail glass. Garnish with expressed lemon swath.
